Tres Leches Cake

Requires a 9x13" pan, and an electric mixer unless you've got strong arms and crazy stamina.

Ingredients

  • 1.5 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 cups unsalted butter (1 stick)
  • 2 cups white sugar
  • 5 eggs
  • 1.5 tsp vanilla extract
  • 2 cups whole milk
  • 14oz sweetened condensed milk
  • 12oz evaporated milk
  • 1.5 cups heavy whipping cream

Prep

Preheat the oven to 350˚. Grease and flour a 9x13” pan. Sift the flour and baking powder together into a bowl.

Beat the butter and 1 cup sugar together using the mixer, until fluffy. Add the eggs and 0.5 tsp vanilla, and beat well. Add the flour mixture a half cup at a time until everything is thoroughly mixed together.

Pour batter into pan and bake for 30 minutes.

Perforate the cake all over with a fork or toothpick and then let it cool to room temperature.

Mix the whole milk, condensed milk, and evaporated milk together in a bowl. Pour the mixture onto the room-temperature cake and let it soak until mostly absorbed.

Clean the mixer and use it to whip the cream with remaining 1 cup sugar and 1 tsp vanilla until thick. Spread the whipped cream over the cake. Done!
