Sweet & Tangy Chicken

Works best if you have a pan that can fit 3 chicken breasts at once.

Ingredients

  • 3 chicken breasts (medium)
  • Salt
  • Pepper
  • Flour, for coating the chicken
  • 2.5 Tbsp butter
  • 1 Tbsp olive oil
  • 5 garlic cloves, minced
  • .25 cups maple syrup or honey
  • 1 Tbsp soy sauce
  • 1.5 Tbsp apple cider vinegar
  • Chives, diced, for garnish

Prep

Put some flour on a plate. Put the chicken breasts on a cutting board and use a knife to cut a grid into one side of each, so they will soak up sauce better. Heat a large (big enough to fit all 3 chicken breasts at once) pan over medium-high. Melt 2 Tbsp butter and the 1 Tbsp olive oil in the pan.

Season the chicken with salt/pepper, and then coat each breast with flour, shaking off any excess. Once the butter/oil is hot, add the chicken breasts (grid side facing up) and cook for 3 minutes.

Flip the chicken breasts and cook for another 2 minutes.

Flip the chicken breasts back so that the grid is facing up again. Add .5 Tbsp butter in the middle of the pan and add the garlic once it has melted. Cook 1 minute.

Add the maple syrup (or honey), soy sauce, and vinegar. Stir and let some liquid evaporate for 1-2 minutes to thicken it, then turn off the heat and continually spoon the sauce over the chicken breasts until they are thoroughly coated.

Sprinkle with chives and serve!
