Spiced Quinoa

Ingredients

  • ~1 Tbsp olive oil
  • 1 onion (small), chopped
  • 1-3 garlic cloves, minced
  • 1.5 cups chicken broth
  • 0.75 cups quinoa
  • 1.5 tsp curry powder
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp cumin
  • 0.25 tsp cinnamon
  • 14oz can chickpeas, drained and rinsed
  • 0.5 cups pine nuts, toasted
  • 0.5 cups raisins, soaked in hot water and drained

Prep

  1. Heat the olive oil (~1 Tbsp) in the pot over medium heat. Add chopped onion (1) and minced garlic (1-3 cloves) to the pot, and cook until translucent (~5 minutes).
  2. Add everything EXCEPT beans, pine nuts, and raisins. Bring to a boil and simmer ~20 minutes. Meanwhile, perform steps 3 and 4.
  3. Microwave a bowl of water till it is very hot. Add the raisins (0.5 cups) and leave them to soak.
  4. Add pine nuts (0.5 cups) to skillet and toast over medium-low heat for 3-5 minutes. WATCH CAREFULLY, because they will go from nicely toasted to burnt really quick. Dump them into a cool dish once golden-brown.
  5. Once the main pot has simmered for 20 minutes, take it off the heat. Add the toasted pine nuts, soaked raisins (minus the water), and rinsed beans. Mix it all together.
